    Spaghetti Squash Parmesan

    1 medium spaghetti squash
    1 beefsteak tomato
    1 tsp Vegetable Magic Seasoning
    1/4 cup Parmesan cheese

    Cut spaghetti squash in half, then quarter. Cover the bottom of a 9 x 13 pan with water, place the squash pieces cut side down, cover the squash with plastic wrap, put in microwave for 6 minutes. Be sure to puncture holes in the plastic wrap, check the squash, it still hard cook for another 4 minutes. Pre-heat the broiler, mine has a mid setting that works great.

    Remove from microwave and scrape squash into a bowl.  Mash up squash, add seasoning and put into a glass pie pan coated with Pam. Cover the squash with the beefsteak tomato slices, sprinkle parmesan cheese over the entire surface of the squash and tomatoes. Put in the broiler until the cheese turns golden brown and bubbles. Serve immediately.

    This was easy and delicious, and it looks quite fancy.
