    Gazpacho Soup

    Makes 8-10 servings (can also be served in shot glasses as hors d'oeurves)

    2 seedless cucumbers, halved and seeded, not peeled
    3 red bell peppers, cored and seeded
    8 plum tomatoes
    2 red onions, rough chopped
    6 cloves garlic, minced
    4 cups tomato juice
    2 cups "Mr. and Mrs. T. Bloody Mary Mix" (original flavor)
    1/2 cup white wine vinegar
    1/2 cup good olive oil
    1 Tbls. Kosher salt
    1 tsp. fresh ground pepper

    Roughly chop all the vegetables into 1 inch cubes.

    In a food processor, process each of the vegetables separately until they are coarsely chopped - be careful not to over process

    After each is processed, combine all the vegetables in a large bowl. Add the garlic, tomato juice, Bloody Mary mix, vinegar, olive oil, salt and pepper.

    Mix well and chill before serving.
